Abstract

Shallots are one of the vegetable commodities, besides that shallots can be used asprocessed products to increase economic value. the number of UMKM makes competitiveness even higher Many UMKM are now engaged in the fried onion sector, UMKM must have standards in addition to providing safety for consumers, it can also improve the quality of the product itself. Improving product quality can be proven by having a certificate of applicable standards, one of the certificates that can improve standards is the Indonesian national standard certificate (SNI). using a CPPOB-based quality management system. PT Sinergi Brebes Inovasi, which has fried onion products under the brand Dapur Rasa, wants to improve product quality to maintain taste and safety to consumers. The right way to fulfill this desire is to carry out SNI certification so
that PT Sinergi Brebes Inovatif can improve the applicable fried onion standards. Before the SNI Certification process is carried out, there are many preparations that must be made to meet the standards, therefore it is necessary to carry out the process of preparing documents based on the CPPOB-based quality management system and gap analysis at the production site. The method used is direct observation and interviews, after the gap analysis is carried out, several discrepancies are found in the documents and production sites so that improvements are made. Until finally PT Sinergi Brebes Inovatif is considered ready to carry out the stages of SNI certification.
